Duck Bresaola Salad
Curing a wide variety of meats is one of our favourite things to do here at the Willow so that’s exactly what we have done with our locally reared duck. Arugala leaves give this dish a spicy pepper dimension. It will leave you with a nice warm sensation until the very last bite. Topped with parmesan shavings for an extra kick.
Mushroom Ravioli
Wild mushroom and herb ragu ravioli stuffed with fresh chevre, orange zest and thyme leaves, tossed in an orange sage brown butter sauce, charred mushrooms and grilled bread
Prairie Paella
Chorizo chicken and tomato infused wild rice paella steeped in a rich spicy clam broth with a pan seared fillet of Lake Diefenbaker steelhead trout and preserved lemon salsa
Carne Asada
Chilli chocolate braised beef ribs on blue cheese and chive potato griddle cakes with a slivered almond and sour cherry braised kale
